This is such a great nugget of information—- thank you so much for teaching us, and for recommending that web site. It’s so true that ancient culture had this great knowledge of how to eat more healthfully, such as the fermented veggies. We have so much to learn from them!
]]>Quick note on the curtido- this version with the vinegar is the the modern “quick” pickling version. Traditionally, it was made like sauerkraut or kimchi, where it was naturally fermented to give it that tangy taste (which vinegar mimics) and it therefore had the wonderful probiotics that kept the people healthier!! Almost all cultures used to eat naturally fermented veggies on a regular basis. 🙂
To learn to ferment veggies, my favorite resource is culturedfoodlife.com and I will follow her kimchi instructions (using your ingredients list, minus the olive oil) to make the curtito.
