For the Multicultural Kid Blogger’s World Cup series, I am presenting on several different countries that are participating. Today’s country is Chile! I would like to share a very common, simple salad from Chile.
My sister lived in Chile for a while as a volunteer in a girls home in Santiago de Chile. She is also an amazing photographer, and started a program for the girls called OJOS Nuevos, where the girls learned a lot about photography, and were able to practice their new skills around the city. While Christi was there, she maintained her vegetarianism and discovered many incredible dishes that utilized the country’s outstanding produce. Shopping at the markets, she was able to find fresh produce from local farmers. The most common vegetables in Chile include potatoes, tomatoes, avocados, artichokes, cabbage, carrots, limes, and onions, plus basil, garlic, and cilantro.
Ingredients for the Ensalada Chilena (Salad from Chile):
Gather your fresh vegetables!
green cabbage
half an avocado per person
corn
cilantro
lemon
olive oil
salt
mayonnaise (optional)
Instructions:
First, slice the cabbage very thin. On each plate, cover the bottom of the plate with the shredded cabbage. Then add a half of an avocado on each plate. Top with corn (cold), minced cilantro, a drizzle of olive oil, and a squeeze of lemon juice. Sprinkle with salt, and add mayonnaise if desired on top. Simple, fresh, perfect for a summer lunch!
I love salads, and have been feeding my kids different versions since they were teeny tiny. If your kids don’t like it at first, keep offering it to them on different occasions until they finally try it!.
